Bagels R Us: How we Make our Bagels Every Single Day

When it comes to our bagels, there are no secrets. We really do make our bagels fresh every single day.

When Bagels R Us had one location, employees made the bagels each morning at our Beach Blvd location. As the business expanded and more stores opened, we decided it was time to move operations to a warehouse. By making the bagels at one location, our quality and recipe remain consistent throughout Jacksonville.


So, how do we stock five locations every morning?


The Bagels

Our dough is made from scratch with only the necessary ingredients. We do not use preservatives, and our dough is not frozen. We do prepare it in advance, though, to give it time to proof.


At 2:00 a.m., our bagel team arrives and prepares to churn out every bagel for the day. One member blanches the bagels, another sorts them, and a third team member prepares them for the baking process.

This process continues throughout the early morning until we finish making every bagel flavor. Once the bagels have finished baking, we sort them by flavor. Lastly, we divide them evenly before our delivery drivers arrive.


And we don't stop at making just bagels!

The Cream Cheeses

Just like our bagels, our cream cheeses are all made fresh daily. Our cream cheese maker arrives at midnight and finishes by the time the bagel makers come in. We like to refer to her as our cream cheese fairy because, like magic, cream cheese randomly appears every morning.


While we have classic cream cheese flavors, we strive to create flavors unique to Bagels R Us. We have everything from lox cream cheese to apple cinnamon, to bacon and cheddar.


Just like we organize our bagels, the cream cheeses are separated by store, so the delivery drivers can quickly grab what is needed.


Everything Else 

Now that we've discussed our bagels and cream cheese, it's time to mention everything else we produce at our warehouse.


Yes, we are known for our bagels: we're Bagels R Us, after all. We also offer a variety of pastries, including cinnamon buns, muffins, danishes, and challah bread.


While our bagel team is working on blanching and baking the bagels, our pastry chefs are working next door. 


They have mastered multitasking, as they have a precise system in place to ensure all items are completed on time. For example, while the muffins are baking, they are working on piping filling into the danishes.

The cheese you get on your Bagels R Us sandwiches? We slice them in-house, too! 


The final step for the pastry team is to slice the cheese, wrap it, and label each stack. This process resembles ordering sliced cheese at a grocery store deli.


After the pastries come out of the oven, are packaged, and the cheese is sliced, the pastry team cleans the prep kitchen and heads home for the day.


Meanwhile, the delivery drivers have their checklists handy while filling their carts that will be loaded into our delivery vehicles.


All items are delivered around 6:00 a.m., so our locations are ready to open by 6:30 a.m.
